Among their discoveries were juniper, yarrow (a rosemary substitute), mustard, dandelion roots, thistle, clover, rosehips, and even the surprisingly lemony tasting thatching ants.
After a day immersed in nature, chefs returned to Calgary to supplement their finds with extra ingredients before cooking outdoors over an open flame. All chefs had 2.5 hours for preparation, except for Massimo, who secured an extra 30 minutes thanks to his previous challenge win. Notably, the Elimination Challenge winner would also receive a prize of $10,000, raising the stakes even higher.
The Standout Dish and Elimination
Shuai Wang impressed the judges with his roasted cabbage paired with rosehip-glazed pork belly, sour cabbage broth, poplar and black spruce oil, and lovage and thatching ant togarashi. “I was really caught up in all of the different flavors that played so nicely with each other…I found this a really exquisite dish,†remarked Holder, affirming Shuai’s culinary prowess.
On the flip side, Massimo and Bailey found themselves in the bottom two. In a heart-wrenching exit, Massimo was eliminated, making him the last Canadian chef in the competition. His passion for Italy and its cuisine made this elimination all the more emotional for both him and his fellow contestants. "Oof, that hurt," Massimo said, his disappointment evident. Host Kristen Kish struggled to contain her tears as she delivered the news, highlighting the episode’s emotional gravity.
Tom Colicchio praised Massimo’s focus on mustard, but critiques about the herbal notes in his bannock left the judges unconvinced of its harmony with the trout. Despite his elimination, Massimo’s culinary journey showcased not only his talent but also the rich connection he held with his roots.
